Tomato beat the heat summer sunset Beverage

The is a delicious drink with pale colour but a yummy tomato burst flavour.


Serves 5


3 large and washed beefsteak tomatoes, coarsely chopped

2 celery hips washed and coarsely chopped

2 teaspoons sea salt (Fine)


Large sieve.

2 Large Bowls


Wooden spoons.

Food processor

Large clothe or tea towel

1. Put celery and tomatoes in processor in 2 batches.Blend until tomatoes are a puree.

Transfer into bowl and whisk in salt. Cover with cloth or towel loosely.

Leave for an hour and a half at room temperature.

2. Put sieve over second bowl and pour in mixture

through sieve chunks of tomato and celery that do not pass shake sieve gently over bowl and discard of chunk of tomato and celery.

refrigerate juice until cold about 1 hour, stir lightly before serving

-tip- This juice may be refrigerated up to one day  loosely covered. Also, you may garnish with mint, lemon slices or even celery leaves.
